Elderberry Immune Syrup

Elderberries are traditionally used in North America and Europe for cold and flu prevention and treatment. Sambucus nigra is high in vitamin C, antioxidants, and helps to clear excess dampness out of the lungs. Aside from upper respiratory infections, elderberries are also used for sore throats and eye care.

 I have taken a traditional elderberry syrup recipe and added an Ayurvedic flair. The addition of ginger, cloves and cinnamon, gives the syrup more heat to prevent or combat congestion. These three spices are great for cold-prevention and increasing agni (digestive fire). A good agni is necessary for a strong immune system.

Ami’s Elderberry Immune Syrup
1 cup black elderberries
5 cups water
2-3 tbs fresh ginger (I use a cheese grater.)
1-2 tbs powdered cinnamon
1-1.5 tsp of whole cloves
1 cup of raw honey

1)    Boil all ingredients except honey.
2)    Simmer for at least one hour. You need it to cook down ½ way.
Use a bamboo chopstick to measure original level. The elderberries will leave a stain on it. Then you can measure when it has cooked down halfway.
3)    Strain and cool to warm.
4)    Add honey and mix until uniform. (Never cook honey. Ayurveda considers cooked honey poisonous.)
5)    Store in refrigerator for up to 3 months. 
6)    Take 2 tsp in warm water or tea and enjoy!
